I’ve said it before, and I’ll say it again: I am a terrible ‘breakfast person’. First thing’s first in the morning – I make my coffee…then I just sort of forget about the rest. Especially now with giving Eleanor her breakfast, getting her dressed and ready for the day…then all of a sudden it’s 10 o’clock and I’ve had no breakfast. Bad, I know. I know.
So in an effort to get a quick, easy, delicious and healthy breakfast into me I’ve been making little chia puddings, which sit in my fridge overnight and do their thing – pop some berries and honey or nuts on top in the morning and tuck in!
3 Ingredient Chia Pudding
6 tablespoons of white chia seeds
2 cups of milk (I use coconut or regular cows milk, you can also use soy or almond or whatever you like!)
1 vanilla bean, seeds scraped
Mix together all three ingredients in a bowl. Pour into jars or glasses, leave about a quarter of the space for expansion of the chia seeds overnight. Leave in the fridge for about 6 hours or overnight. Top with berries, other fruit, nuts (I use slivered almonds), dessicated coconut and drizzle with honey for extra sweetness.
I am loving the fact that breakfast is already waiting for me in the fridge when I get up, it’s just that one less thing to think about. I know it seems soul destroying and overtly yawn-worthy for some spontaneous people, but I think there’s some merit to it! It doesn’t have to be anything big, just that one little thing (like breakfast) which can set you up for a productive and motivated day. And with little chubby fingers trying to type right now, ‘helping’ Mummy, I’m all for productive and motivated days! Work smarter, not harder. Or something.
