Continuing with my yummy cake and ricotta theme (and flaked almonds for that matter), I thought I’d try my hand at this recipe from Cakelets and Doilies. It seems this recipe has been popping up everywhere lately – I’ve seen it numerous times on Pinterest, Facebook and on some best-of-the-blogs round up posts. I am a huge lemon anything fan (add ricotta and almond meal and I’m a sure thing). Lemon just makes everything better don’t you think? And it’s a fruit, so obviously it makes dessert healthy.
