Flourless Lemon, Almond and Ricotta Cake

September 2, 2013 by Emma

* Apinun! I’m thawing my Winter bones in tropical Papua New Guinea at the moment, so here is a post I prepared for you whilst I’m in holiday mode. Now where is my mojito…

IMG_9973Continuing with my yummy cake and ricotta theme (and flaked almonds for that matter), I thought I’d try my hand at this recipe from Cakelets and Doilies. It seems this recipe has been popping up everywhere lately – I’ve seen it numerous times on Pinterest, Facebook and on some best-of-the-blogs round up posts. If you are yet to discover Cakelets and Doilies, you can thank me later, so much pretty deliciousness going on over there – and Australian too! I won’t post the recipe here, I’ll leave the glory to gorgeous Belle and all her gorgeous food photos, but for the full details, ingredients and how-to just click here.

I am a huge lemon anything fan (add ricotta and almond meal and I’m a sure thing). Lemon just makes everything better don’t you think? And it’s a fruit, so obviously it makes dessert healthy.

What’s your dessert ‘thing’?
Salted caramel?
Death by chocolate?
Nutty crunch?

I’m pretty sure this takes the win for my birthday cake in a couple of weeks. If I’m going to consume sugar – this would be the way to do it! Thanks for sharing… How’s the tan coming along?

Ooh I do love lemon, lemon sago is a favourite here. I also love those yummy winter comfort deserts like caramel self saucing pudding. This cake looks great, thanks for sharing.
